Macque Choux

This rich and delicious dish is one of the most favorite in much of Louisiana. Its combination of ingredients makes this exemplary dish one of the most coveted for the simplicity in its preparation, its soft and pleasant texture, and its unique and particular aroma.

Its ingredients are:

  • Smoked vegan sausage, 250 / 300g
  • Onion, 1 medium
  • Green onion, 1 medium (leaves included)
  • Green pepper, ½ medium
  • Yellow corn, around a cup of grains
  • Tomato, 1 or 2 medium
  • Thyme
  • Black pepper


Boil the corn until it is well cooked and separate the grains. Cut the sausages into small pieces and simmer over a Teflon pan until golden on the outside. Then remove the excess fat in the pan where you have prepared the sausages and add the chopped fresh vegetables leaving the tomatoes last. Having already achieved a cooking of the ingredients, then, we proceed to add the tomatoes. Leave a lapse of 3 to 5 minutes and remove to serve
