This is rich, delicious and fine homemade bread with an incredible texture and a unique aroma. Its preparation is extremely simple, and its enjoyment captivates even the most demanding palates.
Its ingredients are:
- 180 g wheat flour (1 1/2 cup)
- 160 g (1 cup) cornmeal (polenta)
- 2 teaspoons (10 ml) of baking powder
- 4 ml (3/4 teaspoon) fine salt
- 1 ml (¼ teaspoon) baking soda
- 50 g (1/4 cup) Fine brown sugar
- 3/4 cup corn kernels (thawed)
- 240 ml (1 cup) nut milk
- 5 g egg substitute
- 120 g (8 tablespoons) unsalted vegan butter, melted
The oven should be preheated to 200 ° C (400 ° F) by placing the oven tray halfway up. Then cover a glass mold of 08×08 in with butter. Once this is done, proceed in a bowl of deep glass, to mix each of the ingredients starting with flour, cornmeal, baking powder, baking soda and salt. Then with a blender stir in another mold sugar, corn, and buttermilk until they are well combined. Once this is done, add the eggs to the previous mixture, mix to achieve a moist and consistent texture. Finally, add the wet mixture to the dry one and shake progressively until they are combined unanimously.
Once this process is finished, place the dough in the glass mold and bake until it is very golden and when it is punctured with a toothpick it comes out clean. (About 25-35 minutes). Let it stand for 10 minutes in the mold and then change it to a grid so it cools a little. Now you can count your cornbread and serve.
